- 50 g unsalted butter
- 50 g brown sugar
- 1 tsp brandy
- 6 bananas
- ice cream, to serve
- Combine the butter, brown sugar and brandy. Cut each banana through the skin lengthways, almost down to the bottom of the fruit, creating a pocket in the skin and flesh.
- Divide the mixture between the bananas, pushing it into the pocket and spreading it out. Close the banana and wrap in foil.
- Barbecue, turning occasionally, until the fruit has softened and the butter and sugar have melted. Cook for 10-12 minutes, turning them occasionally, but you can leave them there for as long as you need to if the BBQ isn’t too hot.
- Serve with a quality vanilla ice cream.
